I loved seeing the clip of you trying your hand at pressing/stamping! It really puts into perspective how talented the shokunin are and how many hours in practice it takes before you're able to create an acceptable product. Personal tip for one-handed egg cracking: Place the eggs on a table, they’ll obviously lay on their sides but also roll a bit until they stabilize. Take the eggs in that position and place the more rounded end of the egg towards your thumb when cracking it on a hard surface (or an edge of a bowl etc.).

at that is used as a taffy pulling machine here in the US, im sure its used for other things but in Gatlinburg TN they have shops where you can see how they make taffy , the machine is in the window so people can watch. that is the only time i've ever seen one of those so this is cool its basically the same process.

A very interesting video, it's amazing to see how they continue to honor traditions and handcrafting while also being able to use more tools to make larger manufacturing possible. It's awe inspiring and at the same time worrisome to see craftsmanship like the candy that requires to be expertly rolled while still burning hot, because I think those kinds of jobs are always in the danger of going extinct because the next generation won't carry on. On a different note, I am sure I am mishearing this, because I can't imagine Jun saying this, let alone in earshot of the shop, but I can't help but hear Jun say "Oh my god, they're so ugly" while holding up the bag at x_x
